Ingredients & Prep

   400 g  Seafood mixed raw prepared
   2 Red chilli large mild finely sliced
   2 tbsp  Olive oil for frying
   20 g  Sun-dried tomatoes chopped
   12 Black olives pitted chopped (optional)
   1 tbsp  Lemon Juice
   1 Garlic finely grated
   1 tbsp  Fresh basil chopped
   1/4 tsp  Salt
   1/4 tsp  Freshly ground black pepper
   4 Bread slices, olive or sun-dried tomato
  Garnish
   1 Lemon cut quarters
   sprinkle  fresh Parsley chopped

Method

  Step 1
Toast bread & cut in half, & set aside.
  Step 2
Place oil in a frying pan, on a med heat, fry chilli & garlic for 30 seconds, add olives & sun-dried tomatoes, fry for a further 30 seconds.
  Step 3
Add seafood add lemon juice basil, salt & pepper & cook through for 5 min until cooked.
  Step 4
Place toasted bread on serving plates, spoon on seafood mixture, sprinkle over parsley & a lemon quarter with each serving.

Suggestion & Tips

Cut bread nice & thin, you could bake in a low oven like Melba toast.
