Ingredients & Prep

   24 Cherry tomatoes  cut in half
   160 g  Feta cheese crumbled
   2 tbsp  Olive oil 
   20 g  Fresh basil chopped
   2 Red or green bell/sweet pepper de-seeded
   1 Garlic finely grated
   8 Olives de-stoned & chopped (optional)
   1/2 tsp  Oregano dried
   1/2 tsp  Fresh Black pepper course ground
   1/2 tsp  Salt
  Garnish
   8 Fresh basil leaves

Method

  Step 1
Cut peppers in half de-seed & remove any white pith, leave stalks on, set aside.
  Step 2
Place cut cherry toms in a bowl, add olive oil, dried oregano, salt, black pepper & garlic, mix well & leave aside for 20 mins.
  Step 3
Cut bell pepper in half leaving stalk on, remove seeds & any pith, spoon in tomato mixture into the half & place in a pre heated oven at 180'c for 35 mins remove & crumble on feta cheese, return to oven for a further 5 mins or so to just melt the cheese.
  Step 4
Serve with a couple of basil leaves on each half to garnish.

Suggestion & Tips

You could use mozzarella &/or finely slice onion.
