Ingredients & Prep
750 ml
Water
500 g
Merguez sausages cut into 1 cm pieces
500 ml
Tomato passata
250 g
Haricot beans tinned drained & rinsed
150 ml
White wine
1 Chicken stock cube or gel pot
1 Onion med chopped
4 garlic clove finely grated
1 tbsp
Sweet paprika
1 tsp
Chilli powder
1 tsp
Freshly ground black pepper
2 tsp
Olive oil for frying
Garnish
15 g
Fresh flat-leaf parsley chopped
sprinkle
extra virgin olive oil
Method
Step 1
Fry & brown the sausages in a frying pan using the olive oil on a med heat, then transfer to a saucepan, in the the same frying pan fry the onion, & garlic for 3 to 4 mins or until a slight colour, then transfer to the sausages pan with the sausages , then add & stir in chilli powder, paprika & black pepper.
Step 2
Place sauce pan on a med heat & add wine, simmer & reduce liquid by half, then add water, tomato passata, stock cube & beans.
Step 3
Place a lid on the sauce pan & simmer on lowest heat for 1 hour, stirring every now & then.
Step 4
When done ladle into serving bowls, sprinkle over parsley & a drizzle of extra virgin olive oil.

Serve with crusty French bread.
