Ingredients & Prep
5 Onions med, thinly sliced
3 Beef stock cubes or gel pots
2000 ml
Water
50 ml
White wine
2 tbsp
Dry Sherry
2 tbsp
Brandy
25 g
Butter unsalted
6 Thyme sprigs (twigs)
1 tbsp
Dark brown sugar
2 tbsp
Bovril
1/2 tsp
Black pepper
Croutons
4 French bread slices cut on the angle 2cm thick
100 g
Gruyere cheese grated
Method
Step 1
In a saucepan add the butter, onion, garlic & thyme then place on a med heat & cook until light brown.
Step 2
Add wine, brandy, sherry & reduce liquid by half, then add water stock cubes, black pepper, sugar & Bovril, then simmer for 15 mins.
Step 3
Toast the bread slices.
Step 4
Place soup into serving bowls then place a piece of toast on top in each bowl sprinkle over cheese & cover toast so there is no exposed toast then place under a hot grill to melt the cheese until it bubbles & serve.
Suggestion & Tips
Completely cover the toast with cheese to stop bread from burning.
