Ingredients & Prep

   100 g  Cooked cold mashed potato
   150 g  White crab meat
   100 g  Brown crab meat
   60 g  Breadcrumbs
   25 g  Flour
   12 g  Fresh Coriander finely chopped
   1 Egg med beaten
   2 Spring onion finely chopped
   1 tbsp  Poppy seeds
   1 tbsp  Sesame seeds
   4 tbsp  Groundnut of veg oil
   1/2 tsp  Salt
   1/2 tsp  White pepper
  Chilli Jam
   2 Large mild fresh red chillies finely chopped
   75 g  Caster sugar
   6 tbsp  Lime juice
   2 tbsp  Rice wine vinegar
   2 pinch  Salt

Method

  Step 1
First make the jam, put all the ingredients in a saucepan over a med heat & simmer for 2 mins, then pour into serving bowl to cool.
  Step 2
In a bowl add mashed potato, both crab meats, spring onion, chopped coriander, salt & pepper & mix well. Form mix into fish cake patties about 100g each.
  Step 3
In a small bowl place the breadcrumbs, poppy & sesame seeds & mix together. In another put in the egg & beat, & then in another bowl put in the flour.
  Step 4
Coat each fish cake first with the flour, then in the egg wash, then coat with the breadcrumb seed mix.
  Step 5
Place a frying pan on a low to med heat, add the oil & fry each fish cake for 3 to 4 mins per side or until golden brown. Keep warm in the oven until all cakes are cooked.

Suggestion & Tips

Instead of the jam you could use Thai sweet chilli sauce.
