Ingredients & Prep

   800 ml  Water
   500 g  Charlotte Potatoes peeled & cut small diced
   400 ml  Coconut milk
   2 Carrots large peeled & cut small diced
   1 Onion brown chopped fine
   2 Celery stick chopped fine
   2 Garlic clove minced
   2 Veg stock cube or gel pot
   300 g  Frozen peas
   300 g  Sweetcorn
   1 tsp  Dried thyme
   1 tsp  Freshly ground black pepper
   3 tbsp  Olive oil
  Garnish
   sprinkle  Fresh flat-leaf parsley

Method

  Step 1
Use a good size saucepan or cooking pot, place over a med heat, first fry off onion, celery, carrot & garlic until soft.
  Step 2
Add potato, thyme, pepper, stock cubes or gel pot/s & the water, bring to a simmer for 20 mins.
  Step 3
Next add sweetcorn, peas & coconut milk then simmer for another 3 mins & serve in bowls & garnish.

Suggestion & Tips

Have with crusty or garlic bread. Of cause you can use other veg of choice. Can be made in advance & re-heated later or frozen.
