Ingredients & Prep

   300 g  Sweetcorn tinned drained weight
   160 g  Self raising flour
   1 tbsp  Vegan egg powder or Arrowroot powder
   250 ml  Coconut milk
   15 g  Fresh Coriander chopped
   1 Green chilli finely chopped
   1 Banana shallots finely chopped
   1 tbsp  Vegan Fish sauce (seaweed one)
   1/2 tsp  Ground white pepper
   2 tbsp  Groundnut oil
  Dip
   80 ml  Thai sweet chilli sauce

Method

  Step 1
Mix well all ingredients apart from Thai sweet chilli sauce & oil in a bowl.
  Step 2
Heat a frying pan on a med heat, then add oil & drop heaped tbsp full's in batches into the pan, cook for 3 to 4 mins per side until firm & golden, place cooked ones on a plate & keep warm in a cool oven until all done, add more oil if required, place fritters on a serving plate with a small bowl of Thai sweet chilli sauce.
  Step 3
For fish eaters you could add some white crab meat & less sweetcorn.
