Ingredients & Prep

   500 g  Octopus Tentacles
   500 g  Red potatoes peeled & cut into 5mm slices
   2 tsp  Smoked paprika
   1 pinch  Saffron (optional)
   3 tbsp  Olive Oil
   1 tsp  Sea salt flakes
  Garnish
   sprinkle  Extra Virgin olive oil
   sprinkle  Smoked paprika

Method

  Step 1
Pre-heat oven to 200°C fan.
  Step 2
Place Octopus tentacles into salted water in a saucepan & simmer on a low heat for 20 mins or until tender.
  Step 3
Par-boil potatoes in salted water & Saffron if used for 12 mins, in a non- stick baking tray add a little of the olive oil & coat the bottom of the tray, lay the cooked potato slices in the tray, then add the rest of the olive oil & coat the potato, next sprinkle over smoked paprika & sea salt, bake for 15 to 20 mins or until the potato starts to colour.
  Step 4
Place cook potatoes onto a serving platter then place cooked Octopus on top of the potato slices & garnish.
