Ingredients & Prep

   500 g  Raw prawns peeled
   8 Small soft tortillas
   2 tbsp  Maze/corn oil
  Marinade
   4 tbsp  Lime juice
   1 Lime zested
   3 Maze/corn oil
   2 Garlic cloves finely grated
   2 tsp  Chipotle chilli paste
   1/2 tsp  Salt
   1/2 tsp  Freshly ground black pepper
  Slaw
   200 g  White cabbage finely sliced
   1/2 Red onion finely chopped
   180 g  Thick sour cream
   3 tbsp  lime juice
   3 tbsp  olive oil
   2 tbsp  Fresh coriander chopped
   1/2 tsp  Salt
   1/2 tsp  Freshly ground black pepper
  Garnish
   1 Ripe Avocado peeled & chopped
   1/2 Red onion finely sliced
   sprinkle  Fresh coriander
   1 Lime wedges

Method

  Step 1
Place all marinade ingredients in a bowl & whisk well, then add raw prawns & leave in the fridge for at least 20 mins.
  Step 2
Make the slaw by putting all the ingredients into a bowl & mixing well, set aside.

Remove marinated prawns from the marinade, then in the same frying pan add oil & fry prawns for 2 min a side or until cooked.
  Step 5
Next build the tacos, lay tortillas flat, then spoon slaw across the middle, lay cooked prawns on top & garnish, then serve.

Suggestion & Tips

You can use other seafoods like mussels or squid or fish.
