Ingredients & Prep

   800 g  Live fresh mussels cleaned
   150 ml  white wine
   150 g  Double cream
   1/2 Fish Stock cube or jelly pot
   2 Banana shallots finely chopped
   2 Garlic clove finely grated
   3 Flat-leaf parsley leaves only chopped
   1 tbsp  Fresh thyme leaves only
   1 tsp  Freshly ground black pepper
   2 tbsp  Olive oil

Method

  Step 1
Rinse mussels under the tap, through away any broken ones.
  Step 2
Place a lidded saucepan over a low heat, add oil, garlic, onion, stir & soften, add wine, stock then bring to a simmer for 2 mins.
  Step 3
Add the mussel, black pepper & thyme place on lid on then cook for 5 mins giving the pan a shake a few times while cooking.
  Step 4
When the mussels have opened add cream & parsley & cook for a further minute & serve.

Suggestion & Tips

Serve with crusty French bread.
