Ingredients & Prep

   600 g  Fresh clams
   4 Parma ham slices chopped into thin strips
   150 ml  White wine
   4 Garlic cloves finely chopped
   1 Red chilli large mild finely chopped
   2 tbsp  Extra virgin olive oil 
   1 French baguette cut into slices & toasted
   3 tbsp  Fresh flat-leaf parsley  chopped roughly
   1 Lemon cut into wedges

Method

  Step 1
In a large lidded frying pan place on a med heat, then add oil, Parma ham & cook for 2 mins until starts to go crispy, then add garlic & chill & cook for another 2 mins, then add wine bring to a simmer then add clams, then cook clams for 6 mins shaking the pan often until all the clams open, then add parsley stir in, discard any clams which are still closed.
  Step 2
Tip cooked clams onto a large serving platter, place toast along the edge of the platter to soak up juices.

Suggestion & Tips

You could use mussels if you like.
