Ingredients & Prep
2 Ripe Avocados cut in half
Filling
150 g
Smoked Salmon fine diced
100 g
Cream cheese
2 tbsp
Fresh chives chopped
1 tbsp
Lemon juice
1/2 tsp
Freshly ground black pepper
1 pinch
Salt
Method
Step 1
Mix cheese, chives, lemon juice, salt & pepper well in a bowl & set aside.
Step 2
Cut Avocados in half lengthways using a large shape kitchen knife, then twist to separate, then using a tsp scoop out the stone or hit with knife blade & twist out stone, next using a spoon make the cavity left by the stone twice as big & along the towards the stalk end to fit filling, then chop the scooped out Avocado flesh into small chunks.
Step 3
Add chopped Smoked Salmon & Avocado chunks to the cheese mixture & carefully fold in.
Step 4
With a spoon fill cavity in the Avocado with the filling equally then place on a serving plate & garnish.
Suggestion & Tips
Instead of Salmon you could use Shrimps or Crab.
