Ingredients & Prep

Carrot peeled & chopped to dice
1 Onion finely chopped
30 g
Fresh Coriander chopped
1 tsp
Fresh thyme leaves
2 Garlic cloves chopped
1 tsp
Ground coriander
2 tsp
Cider vinegar
1 Veg stock cube or gel pot
1/2 tsp
Freshly ground black pepper
2 tbsp
Olive Oil
Garnish
sprinkle
Extra Virgin olive oil
sprinkle
Fresh coriander leaves.
Method
Step 1
Add onion, garlic & coriander seeds into a saucepan, cook on a med heat until soft, then add carrot dice & thyme & cook for 10 mins stirring often until a little colour, then add water & stock cube, simmer for 45 mins with a lid on, stir often, if it gets dry add more water.
Step 2
Next after 45 mins add chopped coriander, pepper & vinegar & cook for 2 mins stirring often.
Step 3
Either blitz with a hand stick blender or pour into a liquidiser to a smooth soup, pour into serving bowls & garnish.
Suggestion & Tips
Can be frozen for later use.
