Ingredients & Prep

   200 g  Jasmine rice uncooked
   4 Eggs med
   4 Spring onion finely chopped
   2 Garlic cloves grated
   2 tbsp  Thai fish sauce
   1 tbsp  Toasted Sesame oil
   1/2 tsp  Ground white pepper
   1/2 tsp  Salt
   1 tbsp  Groundnut oil


  Step 1
Pre-cook the rice, (best in a rice steamer) with the salt until just cooked, then set aside to cool.
  Step 2
In a bowl add sesame oil & white pepper & mix well, then add fish sauce & mix well, next put 1 egg in the bowl & beat with a whisk, when all combined add the rest of the eggs & beat together with the whisk.
  Step 3
Place a non-stick wok on a high heat, add half the oil & cook the egg stirring & bashing as you cook, bash any big bits with a spoon to break up into little pieces, tip out into a bowl & set aside.
  Step 4
Add the rest of the oil add garlic & fry for 30 seconds then add cooked rice & chopped spring onions stir fry until rice is hot, then add cooked egg back in & stir in & serve.

Suggestion & Tips

Very nice with add some cooked prawns in as well.
