Ingredients & Prep

Potatoes peeled then cut into chunks
150 g
Gruyere or Cheddar cheese grated
100 g
Butter
100 ml
Double cream
50 g
Cream cheese
100 g
Parmesan cheese grated
20 g
Parsley fresh chopped
1 tsp
Black pepper
1/2 tsp
Salt
Method
Step 1
Place potatoes in water in a sauce pan & boil for 20 min.
Step 2
Drain potatoes in a colander & allow to cool until no more steam comes off.
Step 3
Mash potatoes with a potato ricer (best) or use a masher until smooth in the sauce pan, add butter, cream salt, pepper, cheeses & Parsley, mix well with a wooden spoon, place pan back on a med heat & stir well especially in the corners of the pan until mash is hot.
Suggestion & Tips
You could add some herbs in with the mash like chives or crispy Bacon.
