Ingredients & Prep

   450 g  Brussels sprouts cut in half lengthways
   150 g  Bacon or pancetta chopped
   2 Banana shallots chopped
   1/2 tsp  Black pepper freshly ground

Method

  Step 1
Blanch sprouts in boiling salted water for 2 to 3 mins, drain & set aside.
  Step 2
Heat a frying pan on a medium heat & fry bacon & shallot until crispy in the butter.
  Step 3
Tip in sprouts, add pepper, toss & heat through & serve.

Suggestion & Tips

Great with roast white meats & Christmas etc. You can garnish with chopped parsley &/or add chopped cooked chestnuts at the end frying the bacon & shallots.
