Ingredients & Prep

   1200 g  Charlotte potatoes washed
   6 Bacon rashers of choice cut into 2cm squares
   200 g  Gruyere cheese grated
   200 g  Mozzarella
   2 Garlic cloves
   1 tbsp  Fresh thyme leaves
   30 g  Butter melted
   30 ml  Olive oil
   1/2 tsp  Freshly ground black pepper 
   1/4 tsp  Salt

Method

  Step 1
Par boil the potatoes in salted water for 12 minutes then allow to cool,.
Pre-heat oven to 180°C fan.
  Step 2
Place each potato on a chopping board then with a sharp knife cut slashes along the length of the potatoes 5mm apart but don’t cut all the wat through, leave about 5mm from the bottom.
  Step 3
In a bowl mix the oil & butter with salt, pepper, garlic & thyme, then with a pastry brush coat the potatoes including down the cuts in the potatoes.
  Step 4
Place coated potatoes in a baking tray & roast for 15 mins.
  Step 5
Next remove potatoes from the oven & slot a piece of bacon in some of the cuts, then place back into the oven for a further 10 mins, check the potatoes are cooked with a fork.
  Step 6
Next remove potatoes from the oven & sprinkle over gruyere cheese back in the oven for 5 mins, take potatoes out a again & place a piece of mozzarella on top of each potato back in the oven for 2 more mins or until the mozzarella stars to melt then serve.

Suggestion & Tips

You can leave out the bacon for vegetarians.
