Ingredients & Prep

   200 g  Dried Couscous
   450 ml  Boiling water
   1 Onion med finely chopped
   2 Garlic clove finely chopped
   1 Red sweet/bell pepper finely chopped
   150 g  Cucumber diced
   4 Spring onion finely chopped
   1 Chicken stock cube or gel pot
   25 g  Fresh coriander finely chopped
   10 g  Fresh mint finely chopped
   1/2 tsp  Freshly ground black pepper
   3 tbsp  Olive oil
   1/4 tsp  Salt

Method

  Step 1
Add oil & onion to a frying pan over a med heat, fry off until very slight colour, then add garlic & cook for 1 to 2 mins until very light brown, then tip into a good sized bowl.
  Step 2
Next put couscous in the bowl, put stock cube & salt in a jug then pour in boiling water, mix to dissolve, pour in the bowl & mix, cover bowl & leave for 20 mins to absorb & cool.
  Step 3
Next add herbs, spring onion, sweet pepper, cucumber & black pepper fold in & serve cold.

Suggestion & Tips

You could add toasted pine nuts & pomegranate seeds or crumbled feta cheese.
