Ingredients & Prep

Potatoes peeled & cut into chunks
350 g
Fresh spinach
1 Onion med sliced finely
1 tbsp
Curry paste hot
2 Garlic cloves chopped
1 tsp
Fresh ginger grated
1 tsp
Garam masala
1 tsp
Turmeric ground
1 tsp
Water
1/2 tsp
Cumin seeds crushed or ground
1/2 tsp
Salt
2 tbsp
Ghee or butter
Method
Step 1
Boil potatoes in salted water for 12 to 15 mins or until just cooked, drain & set aside to cool.
Step 2
Mix curry paste with the water in a small bowl & set aside.
Step 3
Heat a non-stick wok (best) of a frying pan, add ghee/butter, fry onions until light brown, add ginger, garlic & cook for a further minute, add cumin seeds, turmeric, garam masala, & curry paste water mix, stir into onion & cook for 30 seconds, add potato chunks & stir all together carefully not braking potato chunks, add spinach, mix carefully, cook until spinach is soft.
