Ingredients & Prep

   600 g  Parsnips peeled & chopped in chunks
   50 g  Butter unsalted softened
   50 ml  Double cream
   2 Garlic clove whole skin on
   1/2 tsp  Salt
   1/2 tsp  Black pepper freshly ground
   2 tbsp  Vegetable oil

Method

  Step 1
Blanch parsnip in saucepan of boiling water for 2 mins, drain in a colander & allow to cool.
  Step 2
Pre-heat oven to 190'c.
  Step 3
Place parsnips in a roasting tin, coat with the veg oil & roast for 30 to 40 mins of light brown, turn at least once. Half way through cooking add garlic cloves in whole to roast.
  Step 4
When cooked remove garlic cloves & squeeze out the soft garlic out of the skin.
  Step 5
Either blitz in a liquidiser with cream, butter, squeezed out garlic, salt & pepper or place all ingredients into a saucepan & use a stick/hand blender to a smooth puree.

Great with roast meats etc.
