Ingredients & Prep
600 g
Potatoes Maris Piper or Desiree peeled cut in chunks
150 g
Butter unsalted
200 ml
Double cream
1 Onion med finely chopped
1 tsp
White pepper ground
1/2 tsp
Salt
Veg oil deep fat frying
Method
Step 1
Heat 5 cm of oil in a sauce pan on med heat, add onion carefully into the pan & fry until nut brown, remove onion with a slotted spoon or pour oil/onion off through a sieve (best) allow to drain & set aside.
Step 2
Place potatoes in water in a sauce pan & boil for 20 min.
Step 3
Drain potatoes in a colander & allow to cool until no more steam comes off.
Step 4
Mash potatoes with a potato ricer (best) or use a masher until smooth in the sauce pan, add butter, cream salt, pepper & roasted onion, mix well with a wooden spoon, place pan back on a med heat & stir well especially in the corners of the pan until mash is hot.
Suggestion & Tips
This is very naughty mash but nice.
