Ingredients & Prep

   450 g  Ripe tomatoes chopped in to 1/8ths
   400 g  Tin tomatoes chopped
   2 Aubergines chopped into large dice
   3 Courgettes chopped into large dice
   2 Red onions thinly sliced
   4 Garlic cloves chopped
   3 Red sweet/bell peppers chopped
   4 tbsp  Olive oil
   1 tbsp  Fresh thyme leaves
   2 tsp  Balsamic vinegar
   1 tsp  Salt
   1 tsp  Black pepper freshly ground
   sprinkle  Fresh basil chopped
   1/2 Lemon zest only


  Step 1
Heat a pan on a med heat, add olive oil, garlic & all veg apart from tinned & fresh tomatoes, fry until soft.
  Step 2
Add tinned & fresh tomatoes, thyme, vinegar, salt & pepper, turn down heat & simmer for about 20 mins giving the mixture an occasional stir, when sauce is nice and thick remove from the heat, tip into a serving bowl & garnish.

Suggestion & Tips

Great with roast meats, fish etc, or just crusty bread.
