Ingredients & Prep

   400 g  Frozen Peas
   200 g  Bacon or pancetta chopped
   2 tbsp  White wine
   1 Banana Shallot sliced
   15 g  Butter
   1/2 tsp  Black pepper freshly ground

Method

  Step 1
Blanch peas in boiling salted water for 2 to 3 mins, drain & set aside.
  Step 2
Heat a frying pan on a medium heat & fry bacon & shallot until crispy in the butter, add wine & reduce by half.
  Step 3
Tip in peas, add pepper, toss & heat through & serve.

Suggestion & Tips

Great with roast white meats etc. You can garnish with chopped parsley.
