Ingredients & Prep
4 Fresh corn cobs
2 tsp
Smoked paprika
1 tsp
Chipotle paste
2 tbsp
Sunflower oil
1/2 tsp
Salt
1/2 tsp
Freshly ground black pepper
Sour Cream Sauce
150 ml
Sour Cream
1 Garlic clove finely grated

Garnish
1 Lime cut into 4 wedges

Method
Step 1
Pre-heat oven to 180°C fan.
Step 2
In a bowl add oil, chipotle paste, paprika, salt & black pepper & mix well.
Step 3
Make the sour cream sauce by adding all ingredients into a bowl & mix well, set aside.
Step 4
Tear off a piece of foil for each cob large enough to wrap around twice, brush liberally each cob with the oil mixture using a pastry brush then place on the foil & wrap tight, when all done place cobs on a baking tray & cook for 20 mins, then turn 180° & cook for a further 10 mins.
Step 5
Unwrap cobs, place on a serving platter sprinkle over sour cream mix & coriander.
