Ingredients & Prep
4 Courgettes top & tailed cut in half lengthways
5 Bacon rashers or choice chopped
30 g
Butter salted melted
1/2 Onion chopped finely
2 Garlic clove finely grated
200 g
Cheddar & gruyere cheese grated
1/2 tsp
Freshly ground black pepper
Method
Step 1
Pre-heat oven to 180°C fan.
Step 2
After cutting in half, top & tailing courgettes cut a thin slice off the rounded side to form a flat base, next scoop out a channel down the middle with a tsp, then place them in a baking dish or tray.
Step 3
in a bowl mix the melted butter with grated garlic, then using a pastry brush coat the top side liberally then place in the oven for 12 mins to soften.
Step 4
In the meantime add remaining butter mix to a frying pan, add bacon & onion, cook on a med heat stir & cook for about 3 mins or so until cooked.
Step 5
Take out courgettes when soft, then spoon over on each courgette half in the grove the onion & bacon mixture, then sprinkle over cheese & pepper, place back in the oven & cook for another 5 mins or so until the cheeses is bubbling, place on a serving plater & enjoy.
Suggestion & Tips
You can use Marrow for this one but you may need to cook a little longer.
