Ingredients & Prep

   150 g  Long grain rice like basmati
   150 g  Button mushrooms sliced
   1 Onion finely chopped
   4 Garlic clove finely chopped
   300 ml  Water boiling from kettle
   1 Cinnamon stick split length-ways
   2 Cardamom pods bashed open
   1 tsp  Cumin seed crushed
   3 Cloves
   2 tsp  Paprika
   1 tsp  Chilli powder
   1 tsp  Ground turmeric
   1 bay leave
   2 tbsp  Groundnut oil
   sprinkle  Fresh coriander chopped


  Step 1
To a saucepan with a tight fitting lid, add oil & onion & fry until soft, add garlic, cumin seeds, cinnamon, cardamom, cloves & bay leaf, stir & cook for a 1 min, then add paprika, turmeric, mushrooms & rice, stir to coat the rice.
  Step 2
Pour in water & bring to a simmer, place the lid on & turn down the heat to low & cook for 10 mins, turn off the heat & leave to one side with the lid on for 10 mins, remove lid & loosen with a fork to fluff up.
  Step 3
Tip into a serving bowl & garnish with coriander.

Suggestion & Tips

Great with Indian food or just a naan bread..
