Ingredients & Prep

   12 New potatoes pre-cooked halved
   1 Red bell/sweet pepper de-seeded cut into chunks
   2 Courgettes, cut into thick slices
   2 Red onions, peeled and sliced
   4 Garlic cloves, chopped roughly
   200 g  Artichokes harts pre-cooked from a jar in olive oil
   300 g  Butternut squash peeled cut into chunks
   1 Lemon zest & juice
   1 tsp  Sea Salt
   1 tsp  Freshly ground black pepper
   1 tbsp  Fresh Rosemary chopped
   4 tbsp  Olive oil


  Step 1
Pre-heat oven to 180'c.
  Step 2
Mix all the ingredients apart from the artichoke in a bowl & coat with olive oil.
  Step 3
Tip bowl contents into a baking tin, place in the oven & cook for 35 mins, turn carefully veg over occasionally with a egg slice.
  Step 4
After 35 mins take out & add artichoke harts fold into the veg & bake for a further 5 mins.
  Step 5
After 5 mins remove from the oven & tip into a serving bowl.

Suggestion & Tips

You can add or replace veg selection like aubergine & or sun blushed tomatoes etc, also add favourite herb/s.
