Ingredients & Prep

   800 g  Potatoes russet are good
   3 Onions med thinly sliced
   100 ml  Rapeseed oil
   2 Garlic clove finely chopped
   2 tbsp  Olive oil
   1/2 tsp  Salt
   1/2 tsp  White pepper ground
  Garnish
   sprinkle  Fresh parsley chopped

Method

  Step 1
Pre-heat oven to 200'c, peel potatoes then cut into 5 mm thick slices & blanch in boiling water for 5 mins, drain & set aside.
  Step 2
Place olive oil in a frying pan, fry & stir onion until light brown, add garlic & continue cooking & stirring until brown, remove from the heat & set aside.
  Step 3
Add rapeseed oil in a bowl add pepper & stir in, then add potato slices & coat in the oil.
  Step 4
Take a baking dish & place a layer of potato slices over the bottom, then a layer of the onion mix, then more potato & so on until all is used up.
  Step 5
Place potatoes in the oven & cook for 15 mins or so until potato is soft.

Suggestion & Tips

You could use a verity of other herbs when baking.
