Ingredients & Prep

Potatoes Maris Piper or Desiree peeled cut in chunks
150 g
Butter unsalted
200 ml
Double cream
100 g
Spring onion finely chopped
100 g
Kale or cabbage finely chopped
1 tsp
Black pepper ground
1 tsp
Salt
Method
Step 1
Blanch cabbage/kale in a pan with boiling water for 2 mins, then add spring onions & simmer for 30 seconds more , drain in a colander & set aside.
Step 2
Place potatoes in water in a sauce pan & boil for 20 min.
Step 3
Drain potatoes in a colander & allow to cool until no more steam comes off.
Step 4
Mash potatoes with a potato ricer (best) or use a masher until smooth in the sauce pan, add butter, cream salt, pepper & blanched cabbage/kale, mix well with a wooden spoon, place pan back on a med heat & stir well especially in the corners of the pan until mash is hot.

Good with stews.
