For the sauce

2 Garlic cloves finely grated

Tomato ketchup

Method
Step 1
Seasoning mix, in a small bowl mix cornflour, nigella seeds, chilli powder, garlic powder & salt. Place chips in a large bowl add water to wet the chips, then sprinkle over seasoning mix & mix well to coat the chips .
Step 2
Heat oil in a chip pan or deep fat fryer at 120'c & cook chips for 20 mins the remove chips & turn up the heat to 180'c & re-cook chips until crispy & soft in the middle.
Step 3
In the meantime make the sauce in a large frying pan or wok (best), add oil & fry garlic for 30 sec, add sesame seed & fry for a further 30 sec, then add ketchup, chilli powder honey & vinegar, cook for another 30 sec, add chips & toss altogether to coat the chips.
Step 4
Tip into a serving bowl & garnish & eat before chips have a chance to go soft.

Excellent with grilled meats or as a part of a Vegan meal.
