Ingredients & Prep

   1000 g  Charlotte or new potatoes cut into 1/4s
   1 Lemon juice & zest
   4 Garlic cloves finely chopped
   2 tsp  Dried oregano
   1 tsp  Dried rosemary
   1 tsp  Smoked paprika
   50 ml  Olive Oil
   1/2 tsp  Freshly ground black pepper
   1/2 tsp  Salt


  Step 1
Pre-heat oven to 120°C fan.
  Step 2
In a bowl add lemon juice & zest, oregano. rosemary, garlic, paprika, oil, butter, salt & pepper mix well.
  Step 3
Place potatoes into a baking dish or tin, pour over mixture, then with your hands roll potatoes to coat.
  Step 4
Cover dish/tin with foil & bake for 2 hours, remove & test if soft with a knife, if soft gently recoat/ baste potatoes in the oil turn up the oven to 180°C, when hot place potatoes back in & bake for 12 to 15 mins to crisp the edges.

Suggestion & Tips

You could add some olives or sliced onion or both.
