Ingredients & Prep
4 Potatoes large peeled
150 g Butter
75 ml Water hot
1 Vegetable stock cube or gel pot
2 Garlic cloves chopped
1 tbsp Fresh thyme leaves
1/2 tsp Black pepper ground
Cut each potato in half in the middle widthways, then make a cut 4 cm from the first cut on each half removing the rounded end, using a 5 cm pastry cutter cut in the middle to form a disc, you can also place a drinking glass on the potato then use as a guide to cut around the edge with a knife to form a disc.
Place butter into a saucepan & put on a med heat when butter has melted place potato discs in & fry for 5 or 6 mins a side or until golden brown, try not to move potato discs to much as they cook.
In a jug put in the water & stock cube & dissolve, add garlic, thyme & pepper into the pan then pour water/stock into the pan, be careful here as the butter may splutter!!
Reduce the heat to low & allow to simmer with a lid on the saucepan, cook for about 15 to 20 mins, or until soft in the middle, keep checking with a skewer until tender, if over cooked they will turn to mash.
