Ingredients & Prep

   500 g  Potato peeled & cut into pieces
   500 g  Courgette cut into thin slices
   200 ml  Double Cream
   200 ml  Whole milk
   100 g  Gruyere or Parmesan cheese grated
   25 g  Butter
   2 Garlic clove finely grated
   1 tsp  Dried thyme
   1 Veg stock cube or gel pot
   1 pinch  Ground Nutmeg
   1/2 tsp  Freshly ground black pepper

Method

  Step 1
Boil the potatoes for 8 mins in salted water, drain in a colander & allow to steam dry & cool.
  Step 2
Pre-heat oven to 180°C fan.
  Step 3
Heat up the milk to hot (microwave) in a jug or bowl, add stock cube & mix until dissolved, then add cream, garlic, pepper, nutmeg & thyme & mix.
  Step 4
Place cool potatoes & courgette slice into a baking dish, mix to combine the two, then dot the butter on top, then pour over milk/cream mixture, place in the oven for 20 to 25 mins until it is bubbling.
  Step 5
Remove from the oven & sprinkle over selected cheese, put back in the oven for a further 5 mins until the cheeses is light brown.

Suggestion & Tips

You can use other veg types like carrot or fennel.
