Ingredients & Prep
4 courgette top & tailed cut into batons
60 g
butter unsalted very soft
30 g
Parmesan cheese grated
20 g
Panko breadcrumbs
1 tbsp
fresh thyme finely chopped
1/2 tsp
Black pepper freshly ground
1/4 salt
Method
Step 1
Heat oven to 180.c.
Step 2
Place soft butter in a bowl, in a separate bowl add breadcrumbs, cheese, thyme & salt & pepper & mix.
Step 3
Coat each baton in the butter, then dip in the breadcrumb mixture on all sides then place on a non stick baking sheet, when all done sprinkle any leftover breadcrumb mixture over the courgette then bake courgettes batons for 20 mins, or until light/med brown & soft in the middle.
Suggestion & Tips
You can add some garlic or other herbs.
