Ingredients & Prep
600 g
Savoy cabbage leaves, stalks removed finely shredded
Seasoning
1 tbsp
Soft brown sugar
1 tsp
Chinese five spice powder
1/2 tsp
Salt
Vegetable or groundnut oil deep frying
Method
Step 1
Heat 6 cm of oil is a tall saucepan to 160'c, use a thermometer if you can or put a cube of bread in to brown in 45 seconds.
Step 2
Mix all seasoning ingredients in a bowl & set aside.
Step 3
In batches drop a handful of shredded cabbage into the pan & cook for about 30 seconds BE CAREFUL it will spit, drop in & remove hand out of the way quickly!!!, remove crispy cabbage with a slotted spoon, place cook cabbage in a bowl lined with kitchen paper & keep repeating until all the cabbage is cooked.
Step 4
Remove kitchen paper from the bowl , shake over seasoning mix, toss cabbage around & coat, then serve.

Classic old school recipe, good with Chinese food.
