Ingredients & Prep

Fresh asparagus
100 g
Panko breadcrumbs
50 g
Parmesan cheese grated
2 Egg beaten
100 g
Flour
1 Lemon juice & zest
1/2 tsp
Freshly ground black pepper
1/2 tsp
Salt
Method
Step 1
Pre-heat oven to 180°C fan.
Step 2
Place asparagus in a flat dish & coat/wet with lemon juice.
Step 3
In a bowl mix breadcrumbs with Parmesan, lemon zest, salt & pepper
Step 4
Take 3 shallow bowls put flour in 1 egg in 1 & the breadcrumb mix in the other, then coat each spear first in the flour then in the egg, then the breadcrumb mix, then place on a non-stick baking tray or on silicon mats.
Step 5
When all done place in the oven for 10 to 12 mins or until golden brown, place on a serving platter & eat warm.
Suggestion & Tips
Be vet nice with Hollandaise sauce.
