Ingredients & Prep

   600 g  Mushrooms of choice sliced
   200 g  Crème fraiche
   100 g  Spinach
   1 Onion thinly sliced
   4 Spring onions chopped
   2 Garlic cloves chopped
   2 tsp  Dijon mustard
   2 tbsp  Fresh Tarragon
   25 g  Butter
   1 Chicken stock cube or gel pot
   1/2 tsp  Black pepper freshly ground
  Garnish
   sprinkle  Fresh parsley chopped

Method

  Step 1
Heat a frying pan on a med heat, add butter, onions mushrooms & garlic, cook & stir for 5 mins until soft.
  Step 2
Dissolve stock cube or gel pot (best) in a little boiling water, then add to the mushroom mix.
  Step 3
Add cream fraiche, spring onion, mustard, spinach, tarragon & pepper, mix in & continue to cook until the spinach has wilted, add a little water if sauce is too thick.
  Step 4
Tip onto a serving bowl & garnish.

Suggestion & Tips

Good with meat dishes & salad or double portion No for a Main meal. You could add a little white wine before you add the creme fraiche & cook out for a minute or so.
