Ingredients & Prep

   600 g  Spinach pre washed & dry
   2 Banana Shallots finely chopped
   120 g  Cream cheese or mascarpone
   100 ml  Full fat milk
   80 ml  Double cream
   2 Garlic cloves finely grated
   30 g  Parmesan cheese finely grated
   25 g  Butter unsalted
   1 pinch  Cayenne pepper or Nutmeg
   1/2 tsp  Salt
   1/2 tsp  Freshly ground black pepper 


  Step 1
Add butter, garlic & shallots into a good sized saucepan, place over a med heat, stir & cook shallots for 3 to 4 mins to soften.
  Step 2
Next add milk, cream, cream cheese, cayenne pepper or nutmeg, salt & black pepper, stir & bring to a simmer.
  Step 3
Next add spinach & parmesan cheese mix in & cook for about 1 minute or until spinach has wilted.

Suggestion & Tips

Good with Beef, Pork & Lamb.
