Ingredients & Prep

   400 g  Leeks trimmed washed & thinly sliced
   40 g  Butter unsalted
   100 ml  Double cream
   100 g  Smoked bacon or pancetta diced
   1 tbsp  Wholegrain mustard
   1 Lemon zest only
   g  Black pepper freshly ground
   1/2 tsp  Salt

Method

  Step 1
Place 1/4 of the butter with bacon in a pan, fry until crispy.
  Step 2
Add leeks & cook until soft, add cream & reduce by half, add mustard & lemon zest & season with salt & pepper.

Suggestion & Tips

Great with roast meats, pork chops, sausages etc.
