Ingredients & Prep

   150 g  Sweet Corn
   140 g  Self Raising Flour
   3 Free-range egg yolks
   25 ml  Milk
   3 Free-range egg whites
   2 Spring onions finely chopped
   1 tbsp  Oil for frying
   1 Butter for frying
   1 tsp  Golden Syrup or honey
   1/2 tsp  Salt
   1/2 tsp  White Pepper

Method

  Step 1
Place the corn, flour, egg yolk, milk, spring onion, syrup, salt & pepper in a bowl & mix together.
  Step 2
In a very clean bowl, whisk the egg whites to firm peaks, an electric hand mixer is best. Gently fold meringue into the corn mixture using a silicon spatula.
  Step 3
Heat the oil & butter in a frying pan on a med heat. Use tablespoon to measure out the corn mixture & fry in rounds for 1-2 minutes on each side until light brown. Remove and drain on kitchen paper.
  Step 4
Keep warm on a plate in the oven until all cooked.

Suggestion & Tips

You can add fresh coriander Chilli etc if you wish.
