Ingredients & Prep

   700 g  Celeriac peeled and cut into 2 cm discs then cut in half
   150 ml  Double cream
   50 g  Butter unsalted
   2 tbsp  Vegetable or olive oil
   1/2 tsp  Salt
   1/2 tsp  White pepper ground


  Step 1
Heat a frying pan on a low heat, place butter & oil in the pan, add celeriac & fry each side until light brown & soft.
  Step 2
Pour in cream & season heat until it bubbles, tip into either a liquidiser or tip into a tall container & blitz with a stick blender until smooth, if you need to re-heat, tip back into a clean frying pan & re-heat.

Suggestion & Tips

Great with roast meats.
