Ingredients & Prep
1 Cauliflower head cut into florets
100 g
Strong cheddar or gruyere grated
Cheese Sauce
325 ml
Whole milk
200 g
Strong cheddar or gruyere grated
60 ml
Double cream
50 g
Butter unsalted
25 g
Plain flour
1/2 tsp
Black pepper freshly ground
2 pinch
Nutmeg ground (optional)
1 Veg stock cube or gel pot
Method
Step 1
Blanch the cauliflower in boiling salted water for 4 mins, drain in a colander, allow stem off & cool.
Step 2
Pre -heat an oven to 180'c.
Step 3
Make the cheese sauce, put butter in a saucepan & melt, add flour & mix in & cook until it bubbles, add milk slowly whisking all the time, when all the milk had been added & smooth, add stock cube, cheese, pepper & nutmeg if used, whisk until smooth & continue to cook until it bubbles for 1 min.
Step 4
Place evenly in an ovenproof dish, pore over cheese sauce coating all the florets, sprinkle over the other portion of cheese & bake in the oven for 20 mins or until cheese bubbles & browns on the tips.
Suggestion & Tips
Great with roast meats, or on its own with some crusty bread.
