Ingredients & Prep
1 Broccoli head cut into florets
500 ml Full fat milk
100 ml Double cream
80 g Blue cheese of choice like Stilton
80 g Cheddar or Gruyere grated
60 g Butter
15 g Flour
1/2 tsp Freshly ground black pepper
sprinkle Ground nutmeg
Place florets into a pan of boiling sated water & cook for 2 to 3 mins, drain in a colander & set aside to cool & dry.
Pre-heat oven to 180°C fan.
In a saucepan add butter then place over a med heat to melt butter, then add flour & mix in, take off the heat & allow to cool, then add a little of the milk whisk in the add the rest of the milk & whisk until smooth. Then add blue cheese by crumbling it in then the other then the cream, place back on the heat stir until all the cheeses have melted & mixture starts to bubble for 1 min, take off the heat.
Place florets into a baking dish, then pour over sauce to cover, place in the oven & cook for 25 mins or until it starts to brown on top.
