4 Tomatoes large
1 Banana shallot finely chopped

Hard cows mozzarella grated

Method
Step 1
Pre-heat oven to 180°C fan.
Step 2
In a bowl place in shallots, breadcrumbs, parmesan cheese, basil, olive oil, balsamic vinegar, garlic granules, salt & pepper.

Next spoon the mixture back in the tomato shells packing down with the back of the spoon, when all done place in a baking dish or tray, bake in the oven for 15 to 20 mins until soft.
Step 5
Next place about 30g of the mozzarella cheese on top of each tomato, place back in the oven for about 4 to 5 mins to melt the cheese, place on a serving platter, garnish & serve.
Suggestion & Tips
Very nice on toast or as part of a main meal.
