Ingredients & Prep

   2 tsp  Aubergine cut into 5 mm slices as cooked
   30 g  Semolina fine
   2 tbsp  Water
   2 tbsp  lemon juice
   1 tsp  Coriander powder
   1 tsp  Garam masala
   1/2 tsp  Turmeric powder
   1/2 tsp  Red chilli powder
   1/4 tsp  Salt
   4 tbsp  Veg oil

Method

  Step 1
In a large bowl mix semolina with coriander powder, garam masala, chilli, turmeric powder & salt, then add water & lemon juice to make a paste.
  Step 2
Put veg oil in a frying pan on a med heat.
  Step 3
Slice the Aubergine & coat slices lightly on both sides with the paste, then fry on both sides until light brown, do this in batches & keep pre cooked ones in a warm oven on a serving plate.
Great with Indian food.
