Ingredients & Prep

   900 g  Potatoes peeled then cut into chunks
   100 g  Gruyere or Cheddar cheese grated
   100 g  Butter
   100 ml  Double cream
   50 g  Cream cheese
   80 g  Smokey Bacon chopped
   20 g  Parsley fresh chopped
   1 tsp  Black pepper
   1/2 tsp  Salt
   1 tsp  Oil for frying

Method

  Step 1
In a frying pan, fry of Bacon in a little oil until crispy, then set a side.
  Step 2
Place potatoes in water in a sauce pan & boil for 20 min.
  Step 3
Drain potatoes in a colander & allow to cool until no more steam comes off.
  Step 4
Mash potatoes with a potato ricer (best) or use a masher until smooth in the sauce pan, add butter, cream salt, pepper & crispy Bacon, mix well with a wooden spoon, place pan back on a med heat & stir well especially in the corners of the pan until mash is hot.

Suggestion & Tips

Good with sausages.
