Ingredients & Prep

Parsnips peeled cut in half
75 ml
Whisky Bourbon
75 ml
Maple syrup
1 tbsp
Cider vinegar
2 tbsp
Vegetable oil
1/2 tsp
Salt
1/2 tsp
Black pepper freshly ground
Method
Step 1
Blanch parsnip in sauce pan of boiling water for 2 mins, drain in a colander & allow to cool.
Step 2
Pre-heat oven to 190'c.
Step 3
Pour oil over parsnip, salt & pepper in a roasting tin, coat with the oil seasoning & roast for 30 to 40 mins of light brown, turn at least once.
Step 4
Place whisky, vinegar & maple syrup in a sauce pan & reduce by a half to a sticky thick syrup.
Step 5
Take out roasted parsnips when light brown, pour over glaze, toss & coat parsnips then bake for another 15 mins, keep your eye on the smooth don't burn.
