Ingredients & Prep

   1200 g  Potatoes Red, King Edward or Maris Piper
   4 Garlic cloves finely grated
   1 tbsp  Fresh rosemary finely chopped
   1 tbsp  Fresh thyme leaves only
   60 ml  Olive oil
   1/2 tsp  Salt
   1/2 tsp  Freshly ground black pepper

Method

  Step 1
Wash then cut potatoes in half then place in a saucepan of cold salted water, then bring to the boil & cook for 8 mins, drain into a colander & allow to steam off until cool & dry.
  Step 2
Preheat oven to 180°C fan.
  Step 3
In a large bowl add oil, garlic & herbs salt & pepper & mix, then add potatoes & coat, then set aside for 15 mins.
  Step 4
Tip potatoes & all the oil into a baking tray, then place in the hot oven for 12 mins, remove turn & baste the potatoes put back in the oven & cook for another 10 mins or so until golden brown & crispy.

Suggestion & Tips

Great with a roast.
