Ingredients & Prep

   400 g  Potatoes peeled & cut into chunks
   200 g  Cauliflower cut to small florets
   1 Onion med finely sliced
   2 tsp  Fresh ginger grated
   2 tsp  Garlic paste
   1 Green chilli finely sliced
   2 tbsp  Veg oil
  Spice Mix
   1/2 tsp  Turmeric ground
   1/2 tsp  Cumin seeds crushed
   1 tsp  Garam masala
   1/2 tsp  Coriander ground
   1/2 tsp  Chilli powder
   1 tsp  Fenugreek leaves dried
   1 tsp  Salt
  Garnish
   sprinkle  Fresh coriander chopped

Method

  Step 1
Boil potatoes in salted water for 12 to 15 mins or until just cooked, drain & set aside to cool.
  Step 2
Remove cauliflower florets & cut into quarters, then blanch in boiling water for 3 mins, drain & set aside to cool.
  Step 3
Heat a wok (best) or frying pan on med heat, add ghee/oil & fry onions until soft, add garlic & ginger paste, & cook until a little colour, add spice mix & cook for 30 seconds stirring in, toss or carefully stir in potato & cauliflower, cook for another minute or so until potato & cauliflower is hot & coated in the sauce.

Suggestion & Tips

Great with a curry.
