Ingredients & Prep
120 ml
Extra-virgin olive oil
4 Hot green chillies chopped
25 g
Fresh coriander finely chopped
25 g
Fresh parsley finely chopped
4 Garlic clove chopped
1/2 tsp
Cumin seeds
1/4 tsp
Coriander seeds
3 Cardamon pods inner seeds only
1/2 tsp
Salt
1/4 tsp
Freshly ground black pepper
Method
Step 1
Place cardamon seeds on a chopping board & crush with the side of a knife then knock out seeds into a bowl, heat a dry frying pan on a med heat & add cardamon, cumin & coriander seeds & toast until a little smoke comes off then tip back into the bowl to cool, then place in a spice grinder or pestle & mortar, grind to a powder.
Step 2
Either use a mini food processor or pestle & mortar, add oil, garlic, chillies, spice powder, salt & pepper & blitz to a smooth paste.
Step 3
In a bowl add finely chopped herbs then pour in oil mixture & mix together, done.
Suggestion & Tips
Great with Falafel or grilled fish.
